Peppermint Screams

Dorothy quite regularly asks to make ‘them sweets’ and she means these ones!

Our brightly coloured peppermint creams went down very well with everyone a few Christmases ago, but Dorothy was a particular fan, sneaking one whenever she went in to the kitchen!

Then whilst on one of my many Halloween shopping trips, I found a super cute mini bat cutter and realised that if you turn it upside down, a dove cutter (which we had in a Christmas cutter set) looks alot like a ghost.  I knew straight away that I had to make a Halloween version.

You will need

250 grams icing sugar

1 egg white

Black food colouring gel

Peppermint extract

Lustre powder

Black candy melts or black edible ink pen

Cutters

Method

  • Sieve the icing sugar into a bowl
  • Add a few drops of peppermint and a tiny bit of egg white
  • Mix well
  • Continue to add egg white in tiny amounts until the mixture comes together as a dough that can be rolled out with a rolling pin
  • Taste a little and add more peppermint if needed
  • Split the dough in half and add a little black food colouring gel to one half
  • If the black dough becomes too loose, simply add a little more icing sugar
  • Roll out the dough and cut out small bats and ghosties
  • Dust the bats with lustre powder
  • Place on a sheet of greaseproof paper or on a wire rack and allow to harden
  • While the peppermint creams are hardening, melt the candy melts and use a cocktail stick to give the ghosts little eyes

Aren’t they cute!  I wanted to make some little pumpkins too but I can’t find a cutter that’s the right size.  Maybe I’ll find one on the next shopping trip 😆

Love Rachel 🎃
