This recipe has just two ingredients. It’s been floating around the internet for some time but I discovered it when Dorothy was little.
In the ‘before time’ as Dots calls it, when we’d never heard of Covid and spent every day at toddler groups and play dates, she and her friends used to love sharing and swapping their food. A number of her little friends had milk allergies and so I was always happy to find a little treat that was safe to share.
These pancakes don’t taste like the pancakes that you’re used to but they are delicious and drizzled with a little maple syrup, they’re a good swap. Let them go cold and store in an airtight container and they make a great on the go snack for little ones.
You will need
1 ripe banana
2 medium eggs
Spray oil to cook
Method
- Spray a little oil on to a frying pan or hot plate
- Warm the pan to a medium heat while you prepare the mixture
- Mash the banana until there are no lumps at all
- Whisk the eggs
- Combine the two ingredients
- Spoon onto the pan in small rounds
- Cook until you can easily lift one side and flip with a pallet knife
