Pumpkin Spiced Overnight Oats Recipe

One of my favourite things about this time of year is pumpkins and not just because of moments like this!

I know, I know – poor kid.  Yes we laughed …a lot.  Don’t you dare judge me 🙂

After Halloween, the supermarkets tend to go into panic mode and reduce the left over pumpkins to pennies. Now’s the time to bulk buy and make masses and masses of pumpkin puree – the base of my favourite over night oats recipe.

I’m late to the party when it comes to overnight oats, but I’ve fallen for them in a BIG WAY! While I used to be a breakfast dodger, I’ve eaten a proper breakfast for nearly two years now. And if I know that there are oats waiting for me in the fridge, I’m look forward to them from the moment I open my eyes in the morning.
Discovering overnight oats was a real lightbulb moment for me! I only need to spend a couple of minutes preparing before bed and I can have a delicious, healthy, no hassle breakfast, first thing in the morning.


As I said, you’ll need pumpkin puree to make this. Pumpkin puree (not pumpkin pie filling) is easy to find in the US, here in ol’ Blighty…not so much!   So you’ll have to make some which is a bit of a pain, but it freezes well.  Here’s how to make pumpkin puree.
Another ingredients that’s hard to come by here is pumpkin spice mix! Don’t worry, you can make your own using equal parts of nutmeg, ginger and cinnamon.
And here’s what to do with it!

You Will Need

1/4 cup pumpkin puree
1/2 cup unsweetened almond milk
1/2 cup wholemeal oats
1 tablespoon chia seeds
1 tablespoon maple syrup
1/2 teaspoon pumpkin spice mix
Almonds or pecans to scatter on top in the morning
optional – as a treat I added 1/2 teaspoon Biscoff spread. Nom! This obviously makes the dish a little less virtuous.

Method
This really couldn’t be simpler

  • In a bowl, combine all ingredients apart from the oats.
  • Add the oats
  • Spoon the mixture into a jar and fasten the lid
  • Leave in the fridge overnight

This recipe is seriously delicious – creamy and spicy and just sweet enough to feel like a treat even though it’s really quite good for you.
